In Finland, there is a total of approximately 360 million kilos of food waste per year. In the restaurant industry, around one fifth of the food that is meant to be eaten ends up in biowaste, and restaurants account for ca 17 % of the total food waste. Food waste occurs when, for instance preparing food, during serving, or when you have finished eating and left something on the plate. Sustainability is one of our values, and reducing food waste is really close to our heart.
Together with you we want to reduce the food waste at Kårkaféerna, in line with one of UN’s Sustainable Development Goals to halve food waste by the year 2030.
We are doing our best in our kitchens where we actively monitor our waste, the number of guests and the use of ingredients. We strive to use ingredients as effectively as possible and only prepare the amount of food that is being eaten. This might sometimes mean that we have to replace certain dishes on the menu if something runs out during the day.
Remember that by following the plate model, taking only what you can eat, and sorting waste correctly, you can contribute. Every act counts - together, we can help reduce food waste!

We aim to be as environmentally friendly as possible and are constantly working to become more sustainable while offering meals that are full of energy and nutrients at an affordable price. We aim to use Finnish ingredients, preferably as locally produced as possible. Our disposable cups and boxes are recyclable, and we carefully sort our waste. Feel free to enjoy a cup of coffee at our restaurants from a porcelain cup with your friends instead of taking a disposable cup with you!
Kårkaféerna are owned by the Student Union of Åbo Akademi and alumni. This gives us the opportunity to be in close contact with our guests, and we hope that you contact us with requests and suggestions of improvement with a low threshold, either via the feedback form on our website, social media or contact our staff directly. We also conduct annual questionnaires to be as coherent as possible.
Some of our restaurants also offer display cabinet products like baguettes and salads at a discounted price through the ResQ app. Keep an eye on us there to help us, and yourself, so that nothing has to go to waste. Unfortunately, you don’t get a student discount on products purchased via ResQ.
If we have food left over at the end of the day, we cooperate with Operaatio Ruokakassi, where we donate leftover food. They distribute food to those in need.
